Light Chicken Parm


Although I have been dying to tear into some local asparagus and bathe in the juice of freshly picked strawberries, Michigan weather has a different plan for me. We were teased in April, and now it is back to reality in May. Since those local goodies just aren't ready yet, we have gone back to some colder day dishes, but with a lighter twist. The following recipe for chicken parm is only 5.5 weight watcher points and it is very moist and tender for a boneless chicken breast.   1. I made this recipe last week with a few changes...didn't have any bread crumbs on hand so used crushed seasoned croutons and we were very pleased with the outcome. Thanks again for sharing your recipes! We are having this again tonight for dinner!

I made this same recipe but I substituted 2 lbs. of pork spare ribs for the chicken, 2 cups of homemade maple bar b que sauce (you can find the recipe here), and I also didn't have any breadcumbs, so I just consumed three ice-cold oberons while I watched my babies smoke away! It turned out okay, but I really wished my friends were here to help me enjoy it.
